Obituary of Mary Ellen Simchak
NOTE: Due to inclement weather conditions, the services for Mary Ellen Simchak have been changed to: Viewing Sunday, February 28 from 3:00 to 6:00 PM at the Bolock Funeral Home, corner of Routes 940 & 390 in Paradise Valley. Panachida Service at 9:00 AM on Monday, March 1 at the funeral home with Divine Liturgy celebrated at 10:00 AM at St. Nicholas of Myra Byzantine Church, Rt. 940 in Pocono Summit. Interment will follow at Saints Peter and Paul Byzantine Cemetery in Beaver Meadows.
Mary Ellen Simchak, 79, of Mt. Pocono, died Tuesday, February 23 at home. She was the wife of the late Eugene C. Simchak who passed away in 2000.
Born in Beaver Meadows, she was the daughter of the late Andrew and Anna (Molnar) Kokinda. She received her Bachelor of Science degree in Nutrition Science from St. Elizabeth's College.
Before her retirement, Mary Ellen was employed as a dietician at Stroud Manor, Pleasant Valley Manor, and Brookmont Healthcare Centers. She also worked with the ethnic foods sales at her church, St. Nicholas Byzantine Church in Pocono Summit.
She is survived by two sons, John M. Simchak and his wife, Mary Ann and her daughter, Jenn of Blakeslee, Jody G. Simchak and his wife, Kimberly of Moscow; two daughters, Mary E. Wieczorek and her husband, Joseph of Pocono Summit, Jean E. Simchak and her husband, Michael Oser of Mt. Pocono; two brothers, Eugene Kokinda of Hazleton, James Kokinda and his wife, Joan of Allentown; two sisters, Lois Polansky of Rochelle Park, NJ, Martha Beline and her husband, Tom of Beaver Meadows; four grandchildren, Nikki Regan and Raissa Simchak of Mt. Pocono, Elise and Jessica Simchak of Moscow; and two great grandchildren, Mikayla and Olivia Regan.
