They were married on December 24, 1976. Born on October 31, 1954, in East Stroudsburg, she was the daughter of the late George and Donna (Sansenbach) Stack. She lived in Monroe County since birth and was a graduate of Pocono Mountain Senior High School. She spent most of her life working alongside her father at the Paradise Brook Trout Company, where she most recently served as President of the company until 2009. She also worked with her husband in his land surveying business since its inception in 1980. In 2009 she was elected to the position of Tax Collector for Paradise Township, a position she held until her death. Throughout the years, she was very involved in the community by assisting with local political campaigns, serving as a Girl Scout leader and volunteered for Paradise Youth Association. Beth served on the boards of the Barrett Paradise Friendly Library, president of the Monroe County Tax Collectors Association, and numerous trout industry organizations. In her free time, Beth loved spending time with her golden retrievers, cooking, traveling and being at the lake and beach with her grandchildren. In addition to her husband, she is survived by her two beloved children, Meredith Rettaliata and her husband, Aaron of Stroudsburg and Blake Martin and his wife, Rita of Cresco; five adoring grandchildren, Macy Martin, Lyla Rettaliata, Avery Martin, Tessa Rettaliata and Quinn Martin.
